Description

Quick and delicious vegan burrito wraps that you can whip up in just 10 minutes.


Ingredients

  • 1 (15-ounce) can of Black Beans, rinsed and drained
  • 1 large ripe Avocado
  • ½ cup of Frozen or Canned Corn, thawed if frozen or drained if canned
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro, chopped
  • 1 tablespoon of Lime Juice, freshly squeezed
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper, to taste
  • 4 large (10-inch) Flour Tortillas

Instructions

  1. Mash the ripe avocado in a medium-sized mixing bowl until creamy or chunky.
  2. Add lime juice and stir to prevent browning.
  3. Toss in black beans, corn, red onion, and chopped cilantro.
  4. Sprinkle cumin, chili powder, salt, and black pepper over the mixture.
  5. Gently fold the ingredients together to combine.
  6. Optional: Warm the tortillas in a dry skillet for 15-20 seconds or microwave for 30-45 seconds.
  7. Lay a warm tortilla flat, spoon filling into the center, and shape like a small log.
  8. Fold the short ends of the tortilla over the filling, then roll tightly until fully sealed.
  9. Repeat with remaining tortillas and filling.
  10. Slice burritos in half diagonally before serving, or serve whole.

Notes

Avoid skipping the lime juice to keep avocado fresh. Rinse black beans to reduce sodium.
