Ingredients
1 (15-ounce) can of Black Beans, rinsed and drained
1 large ripe Avocado, mashed
½ cup of Frozen or Canned Corn, thawed if frozen
¼ cup of finely chopped Red Onion
¼ cup of fresh Cilantro, chopped
1 tablespoon of Lime Juice, freshly squeezed
½ teaspoon of Cumin Powder
¼ teaspoon of Chili Powder
Salt and Black Pepper, to taste
4 large (10-inch) Flour Tortillas

Instructions
In a medium-sized mixing bowl, mash the avocado using a fork to your desired creaminess.
Add the lime juice to the mashed avocado to keep it fresh.
Add the black beans, corn, red onion, and cilantro to the bowl.
Sprinkle cumin, chili powder, salt, and pepper over the mixture.
Gently fold everything together with a spatula or large spoon, being careful not to mush the beans.
Warm the tortillas if desired to make them pliable.
Lay a tortilla flat on a clean surface and spoon a quarter of the filling into the center.
Fold the short sides in and roll the tortilla away from you to form a burrito.
Repeat with remaining tortillas and filling.
Enjoy immediately or slice in half for presentation.
Notes
Best enjoyed fresh. You can prepare the filling ahead of time and assemble later.
