Quick and satisfying vegan burrito wraps that are packed with flavor and can be made in just ten minutes.
Ingredients

- 1 (15-ounce) can of Black Beans, rinsed and drained
- 1 large ripe Avocado, mashed
- ½ cup of Frozen or Canned Corn, thawed if frozen
- ¼ cup of finely chopped Red Onion
- ¼ cup of fresh Cilantro, chopped
- 1 tablespoon of Lime Juice, freshly squeezed
- ½ teaspoon of Cumin Powder
- ¼ teaspoon of Chili Powder
- Salt and Black Pepper, to taste
- 4 large (10-inch) Flour Tortillas
Instructions
- In a medium-sized mixing bowl, mash the avocado using a fork to your desired creaminess.
- Add the lime juice to the mashed avocado to keep it fresh.
- Add the black beans, corn, red onion, and cilantro to the bowl.
- Sprinkle cumin, chili powder, salt, and pepper over the mixture.
- Gently fold everything together with a spatula or large spoon, being careful not to mush the beans.
- Warm the tortillas if desired to make them pliable.
- Lay a tortilla flat on a clean surface and spoon a quarter of the filling into the center.
- Fold the short sides in and roll the tortilla away from you to form a burrito.
- Repeat with remaining tortillas and filling.
- Enjoy immediately or slice in half for presentation.
Notes
Best enjoyed fresh. You can prepare the filling ahead of time and assemble later.
