Ingredients
1 cup cottage cheese
1 cup almond flour or coconut flour
1/2 teaspoon baking powder

Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the cottage cheese, almond flour or coconut flour, baking powder, and a pinch of salt.
Mix until well combined and form a dough.
Shape the dough into a flatbread on a baking sheet lined with parchment paper.
Bake for 20-25 minutes until golden brown.
Allow to cool slightly before slicing and serving.
Notes
For richer flavor, use full fat cottage cheese. If using coconut flour, add a touch more cottage cheese if the dough feels dry.
