A cozy and quick soup made with real miso and dashi, perfect for any time of day.
Ingredients

- 4 cups dashi broth
- 3 tablespoons miso paste (white or red)
- 1/2 cup tofu, cubed
- 1/4 cup green onions, chopped
- 1/2 cup wakame seaweed, rehydrated
- Optional mushrooms, thinly sliced
- Optional carrots, thin matchsticks
Instructions
- In a pot, bring the dashi broth to a simmer over medium heat.
- In a small bowl, mix the miso paste with a ladle of hot broth until smooth.
- Pour the miso mixture back into the pot and stir gently.
- Add the cubed tofu, wakame seaweed, and any additional vegetables. Stir gently.
- Simmer for about 5 to 10 minutes until everything is heated through.
- Garnish with chopped green onions before serving.
Notes
Use good quality miso for the best flavor. Adjust the amount of miso to taste.
