Description

A cozy and quick soup made with real miso and dashi, perfect for any time of day.


Ingredients

Scale
  • 4 cups dashi broth
  • 3 tablespoons miso paste (white or red)
  • 1/2 cup tofu, cubed
  • 1/4 cup green onions, chopped
  • 1/2 cup wakame seaweed, rehydrated
  • Optional mushrooms, thinly sliced
  • Optional carrots, thin matchsticks

Instructions

  1. In a pot, bring the dashi broth to a simmer over medium heat.
  2. In a small bowl, mix the miso paste with a ladle of hot broth until smooth.
  3. Pour the miso mixture back into the pot and stir gently.
  4. Add the cubed tofu, wakame seaweed, and any additional vegetables. Stir gently.
  5. Simmer for about 5 to 10 minutes until everything is heated through.
  6. Garnish with chopped green onions before serving.

Notes

Use good quality miso for the best flavor. Adjust the amount of miso to taste.
