Baked Parmesan Zucchini

Ingredients

  • 2 medium zucchinis, sliced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix the grated Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper.
  3. Drizzle olive oil over the zucchini slices, then coat each slice in the cheese mixture.
  4. Place the coated zucchini on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes until golden brown and crispy.
  6. Garnish with fresh parsley if desired and serve immediately.

Notes

  1. For extra crunch, consider using panko breadcrumbs. You can also air fry these at 400°F for 10-12 minutes for a quicker option.
