Ingredients

  • 1.5 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup blueberries
  • 1/2 cup sugar (for crumb topping)
  • 1/3 cup flour (for crumb topping)
  • 1/4 cup butter
  • 1.5 tsp cinnamon

Instructions

  1. Preheat your oven to 400°F.
  2. Grease muffin cups or line with muffin liners.
  3. In a bowl, combine flour, sugar, salt, and baking powder.
  4. In a measuring cup, pour in the vegetable oil. Add the egg and enough milk to fill the cup.
  5. Mix the wet and dry ingredients gently.
  6. Fold in the blueberries gently.
  7. Fill muffin cups 2/3 full.
  8. For the crumb topping, mix together flour, sugar, cinnamon, and butter in a bowl.
  9. Sprinkle the crumb topping over the muffins.
  10. Bake for 20-25 minutes, or until a toothpick comes out clean.
  11. Let them cool before enjoying.

Notes

  1. These muffins freeze well, so you can make a big batch to enjoy later. Avoid overmixing and ensure the blueberries are defrosted if using frozen ones.
