  • 1 pound boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 3 green onions, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce (adjust for spice level)
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 2 tablespoons oil for cooking
  • Sesame seeds for garnishing

Instructions

  1. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Heat oil in a large skillet over medium heat, add chicken, and cook until golden brown for about 5 to 7 minutes. Remove and set aside.
  3. In the same skillet, add broccoli, red bell pepper, and carrot; sauté for about 3 to 5 minutes until tender yet crisp.
  4. In a small bowl, mix mayonnaise, sweet chili sauce, Sriracha, and soy sauce until well combined; taste and adjust spice level.
  5. Return cooked chicken to the skillet, pour the sauce over everything, and stir well to coat evenly, heating for a minute.
