Description
Quick and delicious fried rice made with leftover rice, protein, and veggies, topped with a sweet spicy bang bang sauce.
Ingredients

- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 2 eggs, beaten
- 1 cup mixed vegetables (bell peppers, carrots, peas)
- 2 tablespoons oil
- 3 tablespoons bang bang sauce
- Green onions for garnish
- Salt and pepper to taste
Instructions
- Heat oil in a large skillet over medium heat until hot.
- Add mixed vegetables and sauté until tender, stirring often.
- Push veggies to one side and scramble the beaten eggs in the pan until fully cooked.
- Add the cooked rice and diced chicken, mixing everything together and allowing rice to get some contact with the pan.
- Pour in bang bang sauce and stir until well coated. Adjust sauce to taste.
- Season with salt and pepper before serving. Garnish with chopped green onions.
Notes
Use leftover roast chicken for an easy upgrade. Chilling the rice helps to separate it and prevents clumping when frying.
