- 1 lb ground turkey
- 2 cups cooked jasmine rice
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha sauce
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 cup chopped red bell pepper
- 1 cup chopped carrots
- 1 cup chopped broccoli
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Cook jasmine rice according to package instructions so it is ready and warm when needed. Fluff it with a fork and keep it covered.
- In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha sauce, and lime juice to create the Bang Bang sauce. Set it aside.
- Heat a large skillet over medium-high heat and add the olive oil. Let it get hot but not smoking.
- Add the ground turkey to the skillet, breaking it apart with a spoon and cook until browned.
- Once the turkey is cooked through, add soy sauce, salt, and pepper. Stir well to combine and let the flavors meld for a minute.
- Add the chopped red bell pepper, carrots, and broccoli to the skillet, cooking for another 5 to 7 minutes until the vegetables are tender-crisp.
- Remove the skillet from the heat and mix in half of the Bang Bang sauce, ensuring everything is well coated.
- To serve, place a mound of cooked jasmine rice into individual bowls and top with the turkey and vegetable mixture.
- Drizzle the remaining Bang Bang sauce over each bowl. Garnish with sliced green onions and sesame seeds. Serve immediately and enjoy.
Notes
For a different texture, consider topping with chopped peanuts or crispy wonton strips.
