Beef and Cheese Chimichangas

Ingredients
1 lb ground beef
1 small onion, finely diced
2 cloves garlic, minced
1 packet (1 oz) taco seasoning
1/2 cup salsa
1 cup refried beans
1 1/2 cups shredded cheddar cheese
6 large flour tortillas
2 tbsp vegetable oil

Instructions
Heat
a large skillet over medium heat.
Add
the ground beef and diced onion. Cook until the meat browns and the onion softens.
Drain
excess grease.
Stir
in the minced garlic, taco seasoning, and salsa.
Simmer
for 3 to 4 minutes until everything melds nicely.
Taste
and adjust salt if necessary.
Lay
a tortilla flat on a clean surface.
Spread
a spoonful of refried beans down the center of each tortilla.
Top
the beans with a generous scoop of the beef mixture.
Add
a handful of shredded cheese on top.
Fold
in the two sides and roll up tightly.
Preheat
oven to 400°F (200°C).
Place
chimichangas seam side down on a baking sheet and brush with vegetable oil.
Bake
for 18 to 20 minutes until golden and crispy.
Heat
oil in a skillet over medium heat and place chimichangas seam side down.
Cook
2 to 3 minutes per side until golden and crisp.
Remove
from heat and let rest for 2 minutes before serving.
Notes
For extra crunch, brush lightly with oil before baking. Customize fillings and toppings as desired.
