Ingredients
1 pound ground beef
1 cup shredded cheddar or Monterey Jack cheese
4 large tortillas
1 cup diced tomatoes
1/2 cup chopped onions
1 cup lettuce
1/2 cup sour cream
1/2 cup salsa
Salt and pepper to taste
Optional: jalapeƱos, guacamole

Instructions
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and season with salt and pepper.
Warm the tortillas in a separate skillet or microwave.
Lay each tortilla flat and layer with cooked beef, cheese, tomatoes, onions, and lettuce.
Add a dollop of sour cream and salsa.
Roll the tortillas tightly to enclose the filling.
Serve immediately with a side of crispy fries.
Notes
Be sure to drain excess fat from the cooked beef to prevent soggy tortillas. For crunch, add lettuce just before rolling.
