Ingredients
1 pound ground beef
1 onion, chopped
1 bell pepper, chopped
2 cups cooked rice
1 can (15 oz) black beans, rinsed and drained
1 can (10 oz) diced tomatoes with green chilies
2 cups shredded cheddar cheese
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste

Instructions
Preheat oven to 350°F (175°C).
In a skillet, brown the ground beef with onion and bell pepper until the meat is cooked through.
Stir in the cooked rice, black beans, diced tomatoes, chili powder, cumin, salt, and pepper.
Transfer the mixture to a greased casserole dish.
Top with shredded cheddar cheese.
Bake uncovered for 25-30 minutes until cheese is bubbly and golden.
Serve hot and enjoy!
Notes
For best results, use freshly shredded cheddar cheese. This casserole can be made ahead and frozen for later meals.
