- 1 cup cut-up orange segments (2 small oranges)
- 1 cup sliced strawberries
- 1 cup blueberries
- 1 cup diced apple (1 apple peeled or unpeeled)
- 1 cup banana slices (1½ bananas)
- 1 cup grapes, each cut in half
- 1 cup diced pineapple chunks
- 1 tablespoon lemon juice
- ½ cup whipping cream
- 3 packets Stevia sweetener (1 gram each) or 1 tablespoon powdered sugar
- 1 tablespoon lemon juice
- 3 ounces softened cream cheese
- lemon zest from ½ lemon
Instructions
- Wash all fruit thoroughly under cold water. Dry gently with paper towels.
- Peel and segment the oranges, slice the strawberries, dice the apple, slice the banana, halve the grapes, and dice the pineapple. Combine them in a large mixing bowl.
- Add 1 tablespoon of lemon juice and toss to prevent browning.
- In a medium bowl, beat the softened cream cheese until smooth, then add whipping cream and whisk until fluffy.
- Incorporate your choice of sweetener and lemon zest into the dressing, adjusting sweetness to taste.
- Pour the dressing over the fruit and lightly fold until coated.
- Chill for 20 minutes or serve immediately.
