Black Beans and Rice with Sausage

Ingredients
1 cup black beans, canned or cooked
1 cup rice, any kind
1 sausage link, sliced (andouille or preferred)
1 onion, chopped
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon smoked paprika
Salt and pepper to taste
2 cups chicken or vegetable broth
Optional toppings: cilantro, lime wedges, avocado

Instructions
In
a large pot, heat some oil over medium heat. Add the sausage and cook until browned.
Add
onion and garlic, sautéing until softened.
Stir
in the spices (cumin, smoked paprika, salt, and pepper).
Add
the black beans, rice, and broth.
Bring
to a boil, then reduce heat, cover, and simmer for about 20-25 minutes until rice is cooked and liquid is absorbed.
Fluff
the rice with a fork and serve hot, topped with cilantro, lime wedges, or avocado if desired.
Notes
Brown the sausage well for better flavor. Adjust salt to taste before serving.
