A delicious and easy black beans and rice dish with sausage, perfect for busy days and great for leftovers.
Ingredients

- 1 cup black beans, canned or cooked
- 1 cup rice, any kind
- 1 sausage link, sliced (andouille or preferred)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- Optional toppings: cilantro, lime wedges, avocado
Instructions
- In a large pot, heat some oil over medium heat. Add the sausage and cook until browned.
- Add onion and garlic, sautéing until softened.
- Stir in the spices (cumin, smoked paprika, salt, and pepper).
- Add the black beans, rice, and broth.
- Bring to a boil, then reduce heat, cover, and simmer for about 20-25 minutes until rice is cooked and liquid is absorbed.
- Fluff the rice with a fork and serve hot, topped with cilantro, lime wedges, or avocado if desired.
Notes
Brown the sausage well for better flavor. Adjust salt to taste before serving.
