Ingredients

  • 1 cup fresh blueberries
  • 1/4 cup honey
  • 1/2 cup softened butter
  • 1 teaspoon lemon juice

Instructions

  1. In a small saucepan over medium heat, combine the blueberries and honey. Cook for 8–10 minutes, stirring occasionally, until the blueberries burst.
  2. Remove from heat and let cool for 5–10 minutes.
  3. Transfer the mixture to a bowl and mash with a fork or use an immersion blender for a smoother texture.
  4. Add the softened butter and lemon juice. Stir until fully combined.
  5. Spoon the blueberry butter into an airtight container or jar.
  6. Refrigerate for 24–36 hours to allow it to firm up.
  7. Serve on toast, muffins, pancakes, waffles, or scones.

Notes

  1. For a more intense flavor, use wild blueberries. You can store this butter in the fridge for up to a week, or freeze for longer storage.
