- 1/4 cup honey
- 1/2 cup softened butter
- 1 teaspoon lemon juice
Instructions
- In a small saucepan over medium heat, combine the blueberries and honey. Cook for 8–10 minutes, stirring occasionally, until the blueberries burst.
- Remove from heat and let cool for 5–10 minutes.
- Transfer the mixture to a bowl and mash with a fork or use an immersion blender for a smoother texture.
- Add the softened butter and lemon juice. Stir until fully combined.
- Spoon the blueberry butter into an airtight container or jar.
- Refrigerate for 24–36 hours to allow it to firm up.
- Serve on toast, muffins, pancakes, waffles, or scones.
Notes
For a more intense flavor, use wild blueberries. You can store this butter in the fridge for up to a week, or freeze for longer storage.
