Ingredients

  • 400g ground beef
  • 1 cup basmati rice
  • 1 red bell pepper, diced
  • 1 can corn (about 300g)
  • 1 can black beans (about 400g), drained
  • 1 red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 lime
  • Fresh cilantro leaves for garnish

Instructions

  1. Cook the rice according to package instructions.
  2. In a pan, heat the olive oil and sauté the chopped onion and minced garlic until translucent.
  3. Add the ground beef and cook until browned, breaking it apart for even cooking.
  4. Stir in paprika, cumin, salt, and pepper. Taste to adjust seasoning.
  5. Add the bell pepper, corn, and black beans to the pan and cook for an additional 5 minutes.
  6. Fill bowls with cooked rice, top with beef mixture, and drizzle with fresh lime juice.
  7. Garnish with cilantro and serve.
