- 1 cup basmati rice
- 1 red bell pepper, diced
- 1 can corn (about 300g)
- 1 can black beans (about 400g), drained
- 1 red onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 lime
- Fresh cilantro leaves for garnish
Instructions
- Cook the rice according to package instructions.
- In a pan, heat the olive oil and sauté the chopped onion and minced garlic until translucent.
- Add the ground beef and cook until browned, breaking it apart for even cooking.
- Stir in paprika, cumin, salt, and pepper. Taste to adjust seasoning.
- Add the bell pepper, corn, and black beans to the pan and cook for an additional 5 minutes.
- Fill bowls with cooked rice, top with beef mixture, and drizzle with fresh lime juice.
- Garnish with cilantro and serve.
