Cabbage Soup

Ingredients

  • 1 medium head of cabbage, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 3 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable or chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: Shredded chicken, ground beef, or sausage

Instructions

  1. In a large pot, sauté the onion, carrots, and celery until soft.
  2. Add the garlic and cook for an additional minute.
  3. Stir in the chopped cabbage, broth, diced tomatoes, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 30 to 40 minutes or until the cabbage is tender.
  5. If adding protein, stir it in during the last 10 minutes of cooking.
  6. Serve hot and enjoy.

Notes

  1. Taste and adjust salt at the end. Consider adding fresh herbs for extra flavor.
