Cajun Sausage and Rice Skillet

Ingredients
1 lb smoked sausage, sliced
1 cup long grain rice
1 cup bell peppers, diced
1 tbsp Cajun seasoning
1 onion, diced
3 cloves garlic, minced
2 cups chicken broth
2 tbsp olive oil
Salt and pepper, to taste

Instructions
In a large skillet, heat olive oil over medium heat.
Add diced onion and minced garlic; sauté until soft.
Add sliced smoked sausage and cook until browned.
Stir in diced bell peppers and cook for an additional 2-3 minutes.
Add rice and Cajun seasoning, stirring to combine.
Pour in chicken broth and bring to a boil.
Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
Fluff with a fork and serve hot.
Notes
Can be easily doubled for larger servings. Perfect for leftovers!
