Cajun Sausage Pasta

Ingredients

  • 8 oz penne pasta
  • 1 lb Cajun sausage, sliced or crumbled
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 1 bell pepper, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the sausage, onion, and bell pepper; cook until the sausage is browned and the vegetables are soft.
  3. Stir in the garlic and Cajun seasoning; cook for an additional minute.
  4. Add the penne pasta and enough water to cover the pasta.
  5. Bring to a boil, then reduce heat and simmer until the pasta is cooked, about 10 to 12 minutes.
  6. Once the pasta is cooked, stir in the heavy cream and cheese, cooking until the cheese is melted and the sauce is creamy.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

  1. Undercook the pasta by a minute for better texture when reheating leftovers.
