Ingredients

- 8 oz penne pasta
- 1 lb Cajun sausage, sliced or crumbled
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or pepper jack)
- 1 bell pepper, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the sausage, onion, and bell pepper; cook until the sausage is browned and the vegetables are soft.
- Stir in the garlic and Cajun seasoning; cook for an additional minute.
- Add the penne pasta and enough water to cover the pasta.
- Bring to a boil, then reduce heat and simmer until the pasta is cooked, about 10 to 12 minutes.
- Once the pasta is cooked, stir in the heavy cream and cheese, cooking until the cheese is melted and the sauce is creamy.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
Undercook the pasta by a minute for better texture when reheating leftovers.
