Ingredients

  • 1 pound fresh jalapeños
  • 2 cups white granulated sugar
  • 2/3 cup apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon celery seed
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Start by putting on food-safe gloves. Slice the jalapeños into even rounds and set aside.
  2. In a medium pot or Dutch oven, add the sugar, apple cider vinegar, garlic powder, celery seed, turmeric, and red pepper flakes. Stir to combine.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes until the sugar is fully dissolved.
  4. Add the sliced jalapeños to the pot and stir well. Return to a gentle boil, then reduce heat and simmer for another 5 minutes.
  5. Using tongs or a slotted spoon, carefully remove the jalapeño slices and transfer them into clean pint-sized jars.
  6. Increase the heat and boil the syrup for an additional 5 minutes so it reduces and thickens slightly.
  7. Pour the hot syrup over the jalapeños in the jars until completely covered. Let them cool to room temperature before sealing.
  8. Store the jars in the refrigerator and allow the flavors to develop for at least 24 hours before serving.

Notes

  1. Wear gloves when handling jalapeños to avoid skin irritation. Flavors intensify after a few days.
