Ingredients

  • Fresh rhubarb stalks, sliced thinly
  • 1/2 cup sugar
  • 1/2 cup water

Instructions

  1. Using a sharp knife or vegetable peeler, slice rhubarb into thin strips.
  2. In a small saucepan, combine water and sugar. Heat gently until sugar dissolves to make a simple syrup.
  3. Add rhubarb strips to the syrup and let them soak briefly.
  4. Line a baking tray with a silicone mat and lay out the strips evenly.
  5. Bake at 200°F for about 45 minutes until the strips dry out but remain pliable.
  6. While warm, twist the strips into fun shapes. Let cool to set.

Notes

  1. Best used as a garnish on cakes or tarts. Store in an airtight container once fully dry to maintain crispness.
