Instructions
Using a sharp knife or vegetable peeler, slice rhubarb into thin strips.
In a small saucepan, combine water and sugar. Heat gently until sugar dissolves to make a simple syrup.
Add rhubarb strips to the syrup and let them soak briefly.
Line a baking tray with a silicone mat and lay out the strips evenly.
Bake at 200°F for about 45 minutes until the strips dry out but remain pliable.
While warm, twist the strips into fun shapes. Let cool to set.
