Ingredients

  • 2 cups grated carrots
  • 2 apples, cored and diced
  • 1/4 cup raisins
  • 1/4 cup chopped nuts (e.g., walnuts or pecans)
  • 1/2 cup plain yogurt or mayonnaise
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Put the grated carrots in a large bowl. Add the diced apples, raisins, and chopped nuts. Toss gently.
  2. In a small bowl, combine yogurt or mayonnaise, honey or maple syrup, lemon juice, salt, and pepper. Whisk until smooth.
  3. Pour the dressing over the salad ingredients and toss gently until evenly coated. Adjust seasoning if needed.
  4. Serve immediately, or refrigerate for 30 minutes to let flavors meld.
  5. If storing, cover and keep chilled for up to 24 hours. Note: apples may soften slightly over time.

Notes

  1. To prevent browning, toss apples with a bit of lemon juice if making ahead. Use fresh, firm carrots and pick crisp apples for best texture.
