Ingredients

- 2 cups grated carrots
- 2 apples, cored and diced
- 1/4 cup raisins
- 1/4 cup chopped nuts (e.g., walnuts or pecans)
- 1/2 cup plain yogurt or mayonnaise
- 1 tablespoon honey or maple syrup
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Put the grated carrots in a large bowl. Add the diced apples, raisins, and chopped nuts. Toss gently.
- In a small bowl, combine yogurt or mayonnaise, honey or maple syrup, lemon juice, salt, and pepper. Whisk until smooth.
- Pour the dressing over the salad ingredients and toss gently until evenly coated. Adjust seasoning if needed.
- Serve immediately, or refrigerate for 30 minutes to let flavors meld.
- If storing, cover and keep chilled for up to 24 hours. Note: apples may soften slightly over time.
Notes
To prevent browning, toss apples with a bit of lemon juice if making ahead. Use fresh, firm carrots and pick crisp apples for best texture.
