- 1.5 pounds Lean Ground Beef
- 1 Red Bell Pepper, seeded and chopped
- 1 Yellow Onion, chopped
- 1 ounce Taco Seasoning Mix
- 2 ½ cups Biscuit Mix (like Bisquick)
- 1 cup Water
- Cooking Spray (like Pam)
- ½ cup Sour Cream
- ½ cup Mayonnaise
- 4 ounces Diced Green Chiles, drained
- 1 ½ cups Cheddar Cheese, Fiesta Blend, shredded, divided
- 1 teaspoon Garlic Powder
- ½ cup Salsa, mild
Instructions
- Preheat the oven to 350℉.
- In a skillet over medium-high heat, cook ground beef until no longer pink, then drain excess fat.
- In a mixing bowl, combine biscuit mix and water, stirring until well mixed. Press the dough into a greased casserole dish and bake for 5 to 8 minutes.
- Add chopped onions and red bell pepper to the cooked beef and sauté for 4 minutes, then stir in taco seasoning.
- Spread the beef mixture over the biscuit layer.
- In another bowl, mix sour cream, mayonnaise, green chiles, ¾ cup of cheese, and garlic powder; spread over the beef layer.
- Add spoonfuls of salsa on top and sprinkle with remaining cheese.
- Bake uncovered for 30 minutes until hot and bubbly. Let it sit for a few minutes before serving.
Notes
For added crunch, top with extra shredded cheese or breadcrumbs during the last five minutes of baking.
