Ingredients
1 pound ground beef (or substitute with ground turkey or plant-based alternative)
2 cups frozen tater tots
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
1/2 cup sour cream
1/4 cup Taco Bell chipotle sauce (adjust to taste)
6 large flour tortilla wraps
Salt and pepper to taste
Diced tomatoes for freshness
Chopped green onions for crunch

Instructions
Preheat the oven and cook the frozen tater tots according to the package instructions until golden and crispy.
In a skillet over medium heat, brown the ground beef and season with salt and pepper. Cook until no longer pink, then drain excess grease.
In a large mixing bowl, combine the cooked ground beef, crispy tater tots (slightly crushed), shredded cheddar cheese, and shredded monterey jack cheese. Mix well.
Warm the flour tortillas in a dry skillet or microwave for 10-15 seconds.
Spoon a generous amount of the filling mixture onto the center of each tortilla, drizzle with chipotle sauce, and add sour cream.
Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly to form a burrito.
Place the burritos seam-side down in a baking dish and sprinkle additional shredded cheese on top. Bake for 5-7 minutes until the cheese melts.
Remove from the oven and garnish with diced tomatoes, chopped green onions, and cilantro if desired. Serve hot with extra sour cream and chipotle sauce on the side.
