Ingredients

- 1 lb lean ground beef
- 1 can beans (black beans or pinto beans), drained and rinsed
- 1 cup corn (frozen or canned)
- 2 cups ready rice (instant or microwave rice)
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- 2 cups water
- Salt and pepper to taste
- Optional toppings: diced tomatoes, avocado, cilantro, sour cream
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Stir in the taco seasoning, beans, corn, and water. Bring to a simmer.
- Add the ready rice and mix well. Break up any clumps.
- Sprinkle cheese on top and cover until melted.
- Season with salt and pepper, taste, and adjust.
- Serve with optional toppings if desired.
Notes
Use cooked long grain rice if ready rice isn’t available. For a vegetarian option, swap ground beef for diced mushrooms or extra beans.
