Description

A comforting casserole that combines leftover rice, shredded chicken, and mixed vegetables baked in a cheesy, creamy sauce.


Ingredients

  • 2 cups cooked rice
  • 2 cups cooked chicken, shredded
  • 1 cup cream of chicken soup
  • 1 cup milk
  • 1 cup shredded cheese
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine cooked rice, shredded chicken, cream of chicken soup, milk, cheese, mixed vegetables, garlic powder, salt, and pepper.
  3. Stir until well combined.
  4. Pour the mixture into a greased baking dish and sprinkle paprika on top.
  5. Bake for 25-30 minutes, or until heated through and cheese is bubbly.
  6. Let cool slightly before serving.

Notes

Use cold leftover rice or freshly made rice. Don’t skip preheating the oven for even cooking.
