Ingredients
1 lb ground chicken
1 bell pepper, diced
1 onion, diced
2 cups cooked rice
1 cup shredded cheese
4 large tortillas
Salt and pepper to taste

Instructions
In a skillet, heat some oil over medium heat.
Add diced onion and bell pepper; sauté until soft.
Add ground chicken, season with salt and pepper, and cook until browned.
Stir in cooked rice and mix well.
Place a portion of the filling onto each tortilla, sprinkle with cheese, and roll them up tightly.
Place the burritos seam-side down in a skillet with a little oil over medium heat.
Toast until crispy and golden on all sides.
Serve warm.
Notes
For a healthier version, consider swapping out the rice for cauliflower rice and using whole wheat tortillas.
