Ingredients

  • 1 lb ground chicken
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • 4 large tortillas
  • Salt and pepper to taste
  • Oil for toasting

Instructions

  1. In a skillet, heat some oil over medium heat.
  2. Add diced onion and bell pepper; sauté until soft.
  3. Add ground chicken, season with salt and pepper, and cook until browned.
  4. Stir in cooked rice and mix well.
  5. Place a portion of the filling onto each tortilla, sprinkle with cheese, and roll them up tightly.
  6. Place the burritos seam-side down in a skillet with a little oil over medium heat.
  7. Toast until crispy and golden on all sides.
  8. Serve warm.

Notes

  1. For a healthier version, consider swapping out the rice for cauliflower rice and using whole wheat tortillas.
