Ingredients

- 1 lb ground chicken
- 1 bell pepper, diced
- 1 onion, diced
- 2 cups cooked rice
- 1 cup shredded cheese
- 4 large tortillas
- Salt and pepper to taste
- Oil for toasting
Instructions
- In a skillet, heat some oil over medium heat.
- Add diced onion and bell pepper; sauté until soft.
- Add ground chicken, season with salt and pepper, and cook until browned.
- Stir in cooked rice and mix well.
- Place a portion of the filling onto each tortilla, sprinkle with cheese, and roll them up tightly.
- Place the burritos seam-side down in a skillet with a little oil over medium heat.
- Toast until crispy and golden on all sides.
- Serve warm.
Notes
For a healthier version, consider swapping out the rice for cauliflower rice and using whole wheat tortillas.
