Ingredients
2 cups cooked rice
1 lb diced chicken breast
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
1 cup shredded cheese (cheddar or Mexican blend)
1 packet fajita seasoning
1 can black beans (optional)
Salt and pepper to taste

Instructions
Preheat the oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add the sliced onions and bell peppers, and sauté until soft.
Add the diced chicken to the skillet and sprinkle with fajita seasoning. Cook until the chicken is cooked through.
In a large bowl, combine the cooked rice, chicken mixture, black beans (if using), and half of the cheese. Mix well.
Pour the mixture into a greased casserole dish. Top with the remaining cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
Let it cool slightly before serving.

This dish reheats well and can be customized with different proteins, rice types, or cheeses.
