- 2 cups cooked rice
- 1 lb diced chicken breast
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet fajita seasoning
- 1 can black beans (optional)
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the sliced onions and bell peppers, and sauté until soft.
- Add the diced chicken to the skillet and sprinkle with fajita seasoning. Cook until the chicken is cooked through.
- In a large bowl, combine the cooked rice, chicken mixture, black beans (if using), and half of the cheese. Mix well.
- Pour the mixture into a greased casserole dish. Top with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Let it cool slightly before serving.

This dish reheats well and can be customized with different proteins, rice types, or cheeses.
