Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, sliced
  • 1/2 cup red onion, thinly sliced
  • 1 cup tzatziki sauce
  • Pita bread, for serving
  • Olive oil
  • Salt and pepper
  • Chopped parsley, for garnish

Instructions

  1. In a large bowl, combine the cooked chicken, cucumber, cherry tomatoes, bell peppers, and red onion.
  2. Drizzle with olive oil and season with salt and pepper, then toss to combine.
  3. To serve, divide the chicken and vegetable mixture into bowls.
  4. Top each bowl with a generous dollop of tzatziki sauce and garnish with chopped parsley.
  5. Serve with pita bread on the side.

Notes

  1. Prep the chicken and chop the veggies ahead of time for quick assembly. Tzatziki adds great flavor, but can be substituted with yogurt. Serve over rice or in lettuce if gluten-free.
