In a large bowl, combine the cooked chicken, cucumber, cherry tomatoes, bell peppers, and red onion.
Drizzle with olive oil and season with salt and pepper, then toss to combine.
To serve, divide the chicken and vegetable mixture into bowls.
Top each bowl with a generous dollop of tzatziki sauce and garnish with chopped parsley.
Serve with pita bread on the side.
Notes
Prep the chicken and chop the veggies ahead of time for quick assembly. Tzatziki adds great flavor, but can be substituted with yogurt. Serve over rice or in lettuce if gluten-free.
