Ingredients

  • 1 large chicken breast (about 8 oz), cubed
  • 1/2 tbsp olive oil (for veggies)
  • 1/2 tbsp olive oil (for chicken)
  • 1/2 cup carrots, sliced
  • 1 cup broccoli, chopped
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1 cup brown or white rice
  • 1/2 cup water
  • 1/2 tsp sesame oil
  • 2 tbsp brown sugar or coconut sugar
  • 1/4 cup soy sauce or coconut aminos
  • 1 tsp honey
  • 1 garlic clove, minced
  • 1/2 tsp ginger paste or fresh ginger, minced
  • 1 tbsp cornstarch
  • 2 tbsp water (for cornstarch slurry)
  • Toppings: sesame seeds, green onions, chopped

Instructions

  1. Cook rice according to package directions and keep warm.
  2. Heat 1/2 tbsp olive oil in a large pan on medium heat. Add the carrots and broccoli, then season with garlic powder and salt. Cook for 5 minutes until tender.
  3. Remove the vegetables from the pan.
  4. Heat the remaining olive oil in the pan until hot. Add the chicken breast and cook for 3 minutes without moving to get a good sear.
  5. Flip the chicken over and cook for another 3 minutes until browned.
  6. Mix the teriyaki sauce ingredients in a bowl: water, sesame oil, brown sugar, soy sauce, honey, minced garlic, and ginger paste.
  7. Combine the cornstarch with the 2 tbsp of water to create a slurry, then add it to the sauce mixture.
  8. Pour the sauce into the pan with the chicken and cook for another few minutes until it thickens.
  9. Assemble the bowl by layering rice, vegetables, and chicken teriyaki. Top with sesame seeds and green onions. Serve warm.
