Ingredients
1 lb chicken breast, sliced into thin strips
2 medium zucchinis, sliced into half moons
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon soy sauce (or tamari for gluten-free)
Salt and pepper to taste
Optional: red pepper flakes for heat

Instructions
Heat olive oil in a large skillet over medium-high heat until shimmering.
Add the sliced chicken and cook until browned, about 5-7 minutes.
Add garlic and cook for 1 minute until fragrant. Stir constantly.
Toss in the sliced zucchini and soy sauce, stir frying for another 3-4 minutes until zucchini is tender but still has a bite.
Season with salt, pepper, and red pepper flakes if using. Adjust soy sauce as desired.
Serve hot, either over rice or directly from the pan.
Notes
Avoid crowding the pan for better browning. Make sure to preheat the oil for optimal cooking.
