Ingredients

  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1 can black beans, rinsed and drained
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup corn
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with smoked paprika, chili powder, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side until fully cooked.
  4. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  5. In a bowl, combine diced tomatoes, corn, and lettuce.
  6. To assemble the burrito, lay a tortilla flat and add a scoop of rice, black beans, grilled chicken slices, vegetable mixture, and drizzle with chipotle ranch dressing.
  7. Fold the sides of the tortilla over the filling and roll it up tightly.
