Ingredients
1 cup cottage cheese
1 cup rolled oats
1/2 cup applesauce or 1 small grated apple
1 large egg
1/2 tsp cinnamon
1 tbsp honey or maple syrup (optional)
1/2 tsp baking powder
Pinch of salt

Instructions
Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix until well combined.
Allow the batter to sit for 5 minutes to let the oats absorb some moisture.
Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
Bake for 18-20 minutes or until the bites are set and lightly golden on top.
Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Enjoy warm or store in the fridge for up to 4 days.
Notes
For a creamier bite, substitute Greek yogurt for cottage cheese. For a denser texture, a flax egg can be used instead of a regular egg.
