- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup unsalted butter (melted)
- 1 large egg
- 1 cup milk
- 1 cup fresh blueberries
- 1/3 cup all-purpose flour (for streusel)
- 1/3 cup brown sugar (for streusel)
- 2 tablespoons cold butter (chopped, for streusel)
- 1 teaspoon cinnamon (for streusel)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, sugar, salt, and baking powder.
- In a separate bowl, whisk together the melted butter, egg, and milk.
- Pour the wet ingredients into the dry mix and gently fold in the blueberries.
- In another bowl, combine the flour, brown sugar, cold butter, and cinnamon for the streusel topping.
- Line a muffin tin with paper liners and fill them about 2/3 full with the batter.
- Sprinkle the streusel on top of the batter.
- Bake for 20-25 minutes until golden.
- Let cool before serving.
Notes
For a different twist, you can use whole wheat flour or add in chocolate chips.
