Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup unsalted butter (melted)
  • 1 large egg
  • 1 cup milk
  • 1 cup fresh blueberries
  • 1/3 cup all-purpose flour (for streusel)
  • 1/3 cup brown sugar (for streusel)
  • 2 tablespoons cold butter (chopped, for streusel)
  • 1 teaspoon cinnamon (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, sugar, salt, and baking powder.
  3. In a separate bowl, whisk together the melted butter, egg, and milk.
  4. Pour the wet ingredients into the dry mix and gently fold in the blueberries.
  5. In another bowl, combine the flour, brown sugar, cold butter, and cinnamon for the streusel topping.
  6. Line a muffin tin with paper liners and fill them about 2/3 full with the batter.
  7. Sprinkle the streusel on top of the batter.
  8. Bake for 20-25 minutes until golden.
  9. Let cool before serving.

Notes

For a different twist, you can use whole wheat flour or add in chocolate chips.
