Classic Stuffed Peppers

Ingredients

  • 4 bell peppers, varied colors
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can diced tomatoes, undrained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat. Add diced onion and garlic, sauté until translucent.
  4. Add ground beef to the skillet, cook until browned. Drain excess fat.
  5. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well.
  6. Stuff the bell peppers with the beef and rice mixture.
  7. Place the stuffed peppers in a baking dish and sprinkle cheese on top.
  8. Add a little water to the bottom of the dish to help steam the peppers.
  9. Cover with foil and bake for 30 minutes.
  10. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  11. Let cool slightly before serving.

Notes

  1. For a lighter option, consider using ground turkey or a plant-based meat alternative. You can also experiment with quinoa or cauliflower rice instead of traditional rice.
