Ingredients

  • 12 pieces Potstickers (homemade or frozen)
  • 4 cups Chicken or Vegetable Broth
  • 1 tablespoon Fresh Ginger, minced
  • 3 cloves Garlic, minced
  • 1 can Coconut Milk, full fat
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Fresh Lime Juice
  • 1/4 cup Cilantro, chopped
  • 1/4 cup Green Onions, sliced

Instructions

  1. Heat your pot over medium heat and add the minced ginger and garlic. Cook for about 30 seconds to 1 minute until fragrant.
  2. Pour in the chicken or vegetable broth and bring it to a simmer. Scrape any flavor bits from the bottom.
  3. Add the coconut milk and soy sauce and whisk briefly. Keep the heat low to avoid separating the milk.
  4. Gently place the potstickers into the simmering broth. Cook according to package directions, usually about 6 to 8 minutes.
  5. Stir in the fresh lime juice and serve immediately, garnished with cilantro and green onions.

Notes

  1. Do not thaw frozen potstickers before cooking unless the package directs you to. Lime juice is essential for brightness.
