Ingredients

  • 12 to 16 mini bell peppers
  • 1 to 1 1/2 cups cottage cheese
  • Fresh herbs, chopped (parsley and chives recommended)
  • Salt, to taste
  • Pepper, freshly cracked
  • Optional seasonings (garlic powder, smoked paprika)

Instructions

  1. Cut the mini bell peppers in half lengthwise and remove the seeds.
  2. In a bowl, mix the cottage cheese with fresh herbs, salt, pepper, and any optional seasonings you like.
  3. Spoon the cottage cheese mixture into the halved mini peppers.
  4. Serve immediately or refrigerate until ready to serve.

Notes

  1. Best served immediately for a crisp texture. Can substitute cottage cheese with Greek yogurt or ricotta.
