- 12 to 16 mini bell peppers
- 1 to 1 1/2 cups cottage cheese
- Fresh herbs, chopped (parsley and chives recommended)
- Salt, to taste
- Pepper, freshly cracked
- Optional seasonings (garlic powder, smoked paprika)
Instructions
- Cut the mini bell peppers in half lengthwise and remove the seeds.
- In a bowl, mix the cottage cheese with fresh herbs, salt, pepper, and any optional seasonings you like.
- Spoon the cottage cheese mixture into the halved mini peppers.
- Serve immediately or refrigerate until ready to serve.
Notes
Best served immediately for a crisp texture. Can substitute cottage cheese with Greek yogurt or ricotta.
