Cowboy BBQ Bacon Cheddar Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup barbecue sauce
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat a large skillet over medium heat and cook the bacon until crispy, about 5 to 7 minutes.
  3. Remove the bacon and place it on paper towels to drain, then crumble it.
  4. Rub olive oil on both sides of each chicken breast.
  5. Sprinkle garlic powder, onion powder, smoked paprika, salt, and black pepper on both sides of the chicken.
  6. In the hot skillet, sear the seasoned chicken breasts for 4 to 5 minutes on each side.
  7. After searing, reduce heat and pour barbecue sauce evenly over the chicken.
  8. Sprinkle shredded cheddar cheese over the chicken.
  9. Crumble cooked bacon over the cheese.
  10. Transfer the skillet to the oven and bake for 10 to 12 minutes until chicken is cooked and cheese is melted.
  11. Remove from oven and sprinkle with chopped green onions and optionally red pepper flakes.
  12. Allow to rest before serving.

Notes

  1. Serve with roasted potatoes, a crisp salad, or buttery corn for the best flavor combination.
