- 1 cup cherry tomatoes, halved
- 1/2 cup freshly chopped parsley
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Cook the linguine according to package instructions, then drain and set aside, keeping it warm.
- In a large skillet, melt the butter over medium heat until it shimmers.
- Add the minced garlic, smoked paprika, and cayenne pepper; sauté for 1 minute.
- Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, stirring often.
- Stir in the cherry tomatoes and cook for an additional 3-4 minutes until they start to soften and burst.
- Add the cooked linguine to the skillet and toss to combine.
- Remove from heat and stir in chopped parsley.
- Serve with grated Parmesan cheese on top and more cracked pepper if desired.
Notes
