Cowboy Butter Chicken Pasta

Ingredients

  • 12 ounces linguine
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 pound chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup freshly chopped parsley
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the linguine according to package instructions; drain and set aside.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the minced garlic, smoked paprika, and cayenne pepper; sauté for 1 minute.
  4. Add diced chicken, season with salt and pepper, and cook until the chicken is browned and cooked through.
  5. Stir in the cherry tomatoes and cook for an additional 3-4 minutes.
  6. Add the cooked linguine to the skillet and toss to combine.
  7. Remove from heat and stir in chopped parsley.
  8. Serve with grated Parmesan cheese on top.

Notes

  1. Reserve a splash of the pasta water if the sauce looks too dry. Be careful not to burn the garlic.
