Description

Quick and crunchy chicken tenders coated in a cheesy ranch mixture, perfect for busy weeknights.

Ingredients

Scale
  • 1 ½ pounds chicken tenders
  • 1 cup plain Greek yogurt (or mayonnaise)
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup crushed Ritz crackers (or panko breadcrumbs)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • Cooking spray or olive oil

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with foil or parchment and spray lightly with cooking spray.
  2. In a medium bowl, combine the Greek yogurt or mayo with the ranch seasoning. In another bowl, mix the crushed Ritz or panko with cheddar, Parmesan, garlic powder, paprika, and black pepper.
  3. Dip each chicken tender into the yogurt mixture, then press into the cheese and cracker mix. Place on the prepared baking sheet with space between pieces.
  4. Bake for 15 to 18 minutes or until chicken reaches 165°F and the coating looks golden and crunchy.
  5. Let the tenders rest for a couple of minutes, then serve with your choice of sauce.

Notes

For a healthier option, swap Greek yogurt for a plant-based yogurt or vegan mayonnaise. Use gluten-free breadcrumbs if desired.
