- 1 ½ pounds chicken tenders
- 1 cup plain Greek yogurt (or mayonnaise)
- 1 packet (1 ounce) ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup crushed Ritz crackers (or panko breadcrumbs)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 teaspoon black pepper
- Cooking spray or olive oil
Instructions
- Preheat your oven to 400°F. Line a baking sheet with foil or parchment and spray lightly with cooking spray.
- In a medium bowl, combine the Greek yogurt or mayo with the ranch seasoning. In another bowl, mix the crushed Ritz or panko with cheddar, Parmesan, garlic powder, paprika, and black pepper.
- Dip each chicken tender into the yogurt mixture, then press into the cheese and cracker mix. Place on the prepared baking sheet with space between pieces.
- Bake for 15 to 18 minutes or until chicken reaches 165°F and the coating looks golden and crunchy.
- Let the tenders rest for a couple of minutes, then serve with your choice of sauce.
Notes
For a healthier option, swap Greek yogurt for a plant-based yogurt or vegan mayonnaise. Use gluten-free breadcrumbs if desired.
